- Scallop Crudo: Shiso, uni, yuzu paired with Woody Creek Belgian White
- PMS: Peach, mache, Surryano paired with Raging Bitch Belgian-Style IPA
- Rappahannock Oysters: Raw, baked, and fried paired with Pearl Necklace Oyster Stout
- New Frontier Bison: Shrooms, grass, acid paired with Gonzo Imperial Porter
- Charlotte: Blackberries, nectarines, bombe paired with Horn Dog Barleywine
